Classic Cobb with Dill Vinaigrette

Salads are my thing, I actually crave them.  Crazy, I know.  I love to experiment with different dressings, giving the same old classic salads a new depth of flavor.  My favorite of the moment is Dill Vinaigrette.  My, my so good!  I first came across this at my local farm store, where I like to get lunch at.  I stepped out of the box and tried a new dressing and salad, it was a big day.  I had never thought to use dill in a dressing; honestly I thought dill was for pickles.  Well I was pleasantly surprised and that Dill Vinaigrette became my new favorite.  I was now determined to create my own.  So last week I used the Dill Vinaigrette with a classic cobb minus bacon and cheese.  Of course you can add them to your salad though.  It was Delicious; the Dill really gave a new flavor to my classic salad.  Here’s what I came up with…

Classic Cobb Salad

•    1 head/heart Romaine Lettuce (Chopped)
•    5 Cherry tomatoes (halved)
•    ½ Bell pepper (red, orange, or yellow) (diced)
•    2 Slices of Red Onion (quartered)
•    ½ Avocado (Sliced)
•    1 hard-boiled Egg (peeled and cut to your liking) 
Throw in all in a bowl and then pour dressing on top and enjoy!
Note: Add bacon and cheese if you’d like.

Dill Vinaigrette

•    ¼ cup Olive Oil
•    2 TBSP Red or White Wine Vinegar
•    1 ½ tsp Honey
•    ¾ tsp Dried Dill Weed
•    1/8 tsp Sea Salt
•    1/8 tsp Garlic Powder
•    1/8 tsp Black Pepper
Place in blender, ninja, or food processor…whatever you’ve got and blend together and then cover and let in chill in fridge for about 20 minutes.
